A new wave restaurant arrived in the West Village this fall brought to you by Chef Hisanobu Osaka, the former sous-chef of Morimoto. His restaurant, Archipelago, focuses on French cuisine with a Japanese twist. The name Archipelago, was given to the restaurant to symbolize the island of Japan, tying in with the seafood focused French menu they serve up, which is highly influenced by the Japanese kaiseki style cuisine. The restaurant uses only locally caught fish to ensure its freshness. Another interesting feature of the restaurant is that their menu is divided into three categories, Starters, Mains and Shokuji. While the Starters and Mains are small and light, the Shokuji menu features rice and noodle dishes based on the Japanese way of eating, which is to start off light, then finishing up with a substantial carbohydrate-based meal. Every single dish Chef Osaka makes features some unusual combinations of flavors such as the Usuzukuri ($12), thinly sliced fresh fluke rolled over scallions, shiso, jalapeño, served with clam juice gelee and hot scallion oil. Original paintings by Hiroki Otsuka, a popular manga illustrator, creates a contemporary feel to the space adding to the memorable experience.
Cannelloni
Cauliflower Pasta stuffed with Crab meat served with Crab meat Mille-Feuille. Chef Osaka is particular about the freshness of the ingredients, especially seafood, so the menu changes almost daily depending on the catch of the day.
